amy's yum stir fry noodles
serves 2-3

1 packet hokkien noodles (try to get the white ones cause they don't have colouring added)
1 carrot, matchsticked
big handful bean sprouts
1 packet sam wah fried tofu, each piece quartered
veggie oyster sauce
soy sauce
1 bunch choy sum or chinese broccoli, chopped very big
1 tsp garlic
1 tsp sambal oelek (chilli paste)
peanut oil

heat the peanut oil till very hot in ya wok, a few tbsp will do. add the sambal oelek and garlic and fry for only a few seconds. add the carrot and fry for a few seconds more. then add the tofu, bean sprouts, choy sum/broccoli and noodles. stir fry till combined, add a little water if it sticks. add veggie oyster sauce to taste, then add a tiny bit of soy sauce. very yum!
