pancakes
makes 4 pancakes

1 cup plain flour
1/5 tbsp sugar
2 tsp baking powder
1/8 tsp salt
1 cup milk alternative (soy, rice, oat, almond etc)
2 tbsp vegetable oil

Combine dry ingredients and mix thoroughly. Mix in the liquids and beat with a whisk or electric mixer until the batter is smooth. Measure 1/3 cup batter onto a previously heated, well oiled frypan. When bubbles appear on the surface of the pancake (after about two minutes), flip it with a spatula, and cook for another 2 minutes on the other side. Remove from the frypan. Eat! Yummy with maple syrup or lemon and sugar.
