chocolate mousse
serves four

100 grams 70% cocoa dark chocolate (lindt is good)
2 fluid oz water
2 tsp vegetable oil
2 oz caster sugar
additional caster sugar
300g block silken waterpacked tofu, drained

melt chocolate and water in a double boiler until smooth. stir in the vegetable oil. remove from the heat and add the 2oz caster sugar, stir. in a blender, blend the block of silken tofu until smooth. add the chocolate gradually, blending between additions. when the chocolate is all added, add 1/4 cup caster sugar at a time, blending between additions, until desired taste is reached. add air to the mixture by turning the blender on and off quickly several times. pour into four serving dishes, and refrigerate until firm. to serve, put a scoop of vegan icecream on top!
