mexican beans this recipe is basically a "make up as you go" type thing. you can put in whatever you want to make it taste nice! 1 can kidney beans, drained heat the vegetable oil in a pan, and fry the onion until it is soft and transparent. add the mushrooms and the eggplant and cook for a few more minutes. Add the beans, tomatoes and tomato paste, and stir it until combined. add equal amounts of chilli powder and cajun seasoning to taste, stir it really well, taste again and adjust spices. heat until it is piping hot, and serve with rice and green beans. |
