lemon cake
makes 1 big cake or 6 little cakes

1 1/2 cups flour
2 tsp baking powder
1/4 tsp salt
3/4 cup sugar
3/4 cup soy milk
2 tsp lemon extract
zest of one lemon
1/4 cup oil
1 egg replacer

preheat oven to 180 degrees C. in a large bowl, stir together the flour, baking powder and salt. add the sugar, soymilk, lemon extract, lemon zest, oil and egg replacer and mix until just mixed. pour into a lightly oiled cake tin/s and bake for 25-30 minutes. test with a skewer and give it more time if it needs. cool on a wire rack and eat! yum!
