leek and potato soup
serves 4

few tbsp vegetable oil
2 leeks, chopped
6-8 potatoes, peeled and chopped
1.2 litres vegetable stock
soymilk

heat oil in a big pan. add leeks and stir until softened. add potatoes and stock and cook for about 20 minutes until the potatoes are cooked and soft. blend in a blender for smooth soup. return to heat and add soymilk until it is creamy. eat with herb scones!
