amy's rad hotpot
serves 2

1 stick celery, thinly sliced
1 carrot, cut into matchsticks
1 packet sam wah fried tofu
veggie oyster sauce
1 bunch choy sum or chinese broccoli, chopped very big
about 6 snow peas, sliced in half
bean sprouts
veggie oil (peanut is good)
1 tsp garlic
1/2 tsp sambal oelek (chilli paste) 1 tbsp cornflour dissolved in approx 1 cup water

heat the oil in ya wok until very hot. add the garlic and sambal oelek and stir for only a few seconds. add the celery and carrot and stir fry for a few more seconds. add the snow peas, tofu and choy sum and fry until the choy sum starts to wilt. add a big dollop of oyster sauce, mix it in, then add the cornflour paste. stir until it boils and thickens to make a sauce. taste and adjust ya oyster sauce. serve with rice! yum!
