herb scones
makes 4

1.5 cups SR flour
1 tsp baking powder
2 tsp vegetable margarine
2 tsp mixed herbs
1 tsp dried parsley
1/2-3/4 cup soymilk

sift flour and baking powder into a bowl. rub in margarine until the mixture resembles fine breadcrumbs (i do it in the food processor). add mixed herbs and parsley, mix well. make a well in the centre, add soymilk and mix to a soft dough. turn out onto a lightly floured benchtop, and cut into quarters. roll each quarter into a ball, brush with soymilk, and cook in a preheated 200 degree C oven for 10-15 minutes until cooked.
