curry patties
makes three

5 tbsp green lentils, soaked
1 tsp curry powder
1 bay leaf
few tbsp breadcrumbs
soymilk
sesame seeds
oil for frying

boil lentils in water with the bay leaf for about 30 minutes, until they are very soft and the water has evaporated- it needs to be quite stiff. remove the bay leaf, add the curry powder and mix it in, then cook it for a few minutes more. if it is still too runny to form into patties, add a tablespoon or two of breadcrumbs. mix together the soymilk and breadcrumbs in a small bowl to form a runny paste. put the sesame seeds into another bowl. form the lentil mixture into three patties, dip each patty into the breadcrumbs and turn, making sure it is covered, then cover each with sesame seeds. fry in a frying pan in a little oil until the seeds are browned, then serve with salad and bread.
