mad good chocolate cake
makes one cake or seven small cakes

1.5 cups flour
1/2 cup cocoa powder
1/2 tsp bicarb soda
1 tsp baking powder
1/8 tsp sea salt
4 oz extra-firm low fat silken tofu
3/4 cup soy milk
1/2 cup canola oil
2 tsp vanilla essence
1/4 tsp fresh lemon juice

preheat oven to 180 degrees. in a large bowl, sift together the cocoa, flour, baking powder and soda together. add the salt and stir until well combined. in a blender, combine the tofu, soy milk, maple syrup, lemon juice and vanilla, and puree until smooth. pour the wet ingredients into the dry ingredients and whisk until smooth, scraping the sides of the bowl with a spatula as needed. fill one round cake tin or seven one-cup muffin pans with the mixture. bake for 35-45 minutes until a skewer stuck in the middle comes out clean. let cool to the touch and remove from the pan(s).
