banana slice

1 banana
1 cup self-raising flour
1/2 tsp cinnamon
60 g vegetable margarine
1/2 cup sugar
1 egg substitute
1/4 cup soy milk
1/4 cup chopped pecans or walnuts

peel and mash banana. sift flour with spices in a separate bowl. cream margarine and sugar, add banana, and beat for two minutes. add the egg replacer and beat well. add alternately milk and sifted flour and stir in chopped nuts. bake at 180 degrees for 25-30 minutes until cooked and slightly brown. when cool/warm, top with lemon/passionfruit icing. cut into slices.

lemon/passionfruit icing

1 tbsp vegetable margarine, melted
icing sugar
lemon juice
2 tsp passionfruit pulp

put about 1 cup of icing sugar into a bowl. add the margarine and the passionfruit pulp, then add enough lemon juice until it is smooth and spreadable. if you add too much, add some more icing sugar, but if it is too dry, add more lemon juice.
