haitian banana fritters
from memory, makes about 6, but depends how big you make them

1/2 cup wholemeal flour
1/2 cup plain flour
2 tsp baking powder
1 tsp bicarb soda
1 tsp ground cinnamon
approx 1 cup soy milk- vanilla flavour is nice
1/2 cup mashed ripe banana
1 1/2 tsp vanilla essence
1 medium banana, diced

sift the flours, baking powder, bicarb soda, cinnamon into a medium sized bowl. in another bowl, combine bananas, soymilk and vanilla. mix together, then add to the dry mixture. stir until you have a batter- you may need to add more soymilk.

preheat a nonstick frying pan over medium heat. oil it lightly. drop the batter onto the frypan to make small fritters. turn over when the tops are bubbly and the edges appear dry. cool until golden on both sides.

these are really nice with custard!
